Pozole
Serves About; 4-6 People
Violeta's Gift
Ingredients:
-
2 lb. of Pork Mix
-
½ Onion​
-
Salt
-
Can of Hominy
-
8 Guajillo chiles
-
5 Arbol chiles
-
¼ of Pasilla chiles
-
Cabbage or Lettuce
-
Radishes, limes, dried oregano
-
Other toppings of your liking
Steps:
-
Rinse meat, then place it in pot filled with water
-
2 lb. of meat, 2 gallons of water​
-
Add 5 bay leaves, ½ an onion, and 1 tbsp. of salt​
-
Let boil at high for 1.5-2 hrs
-
Until meat is tender​
-
After an hour, pour hominy
-
-
-
Meantime, boil chiles (take tails and seeds off)​ with water for 10-15 min. until soft​​
-
Let cool, then pour in blender​
-
-
Once meat is ready, strain the chile blends into the meat pot and let boil for another 15-20 min.
-
Stir every other minute- make sure everything is mixed​
-
-
Once done, add another pinch of salt, stir for one min., and let it cool for 10-15 min. until serving
-
Dress it with your choosing of toppings;

Cabbage/Lettuce, radish, limes, dried oregano, etc. ​

Serves About; 2-4 People
Leek Soup
Violeta's Curiosity
Ingredients:
-
3 Leaks
-
3 Potato
-
Chicken Broth
-
Olive Oil
-
Green Onions
-
Salt
-
3 Cloves of garlic
-
2 Carrots
Optional:
-
Bacon
Steps:
-
Wash vegetables, then dice them all
-
In a pan, put olive oil (1tbsp.), sauté Leaks until tender for about 2 min.
-
Put garlic and stir for 1 min.
-
Then add potato, and carrots
-
Stir for 1-2 min., then pour box of Chicken Broth and boil until potato is ready (soft)​
-

2 Options Now:
-
If you would prefer chunky soup, stop here, let cool, and serve yourself!​

If you would prefer more liquid soup, follow the steps below;
-

Let cool, then blend until it looks like puree
-
Then place in medium heat pan (no oil or butter needed) and stir for 2 more minutes​
-
Let cool, and add some bacon bits or green onion on top to add more flavor!

Add more salt at end, based on preference
-

Chicken Tortilla Soup
Serves About; 4-6 People
From Violeta's cookbook
Ingredients:
-
1 ½ cups of chopped onion
-
3 ½ cups of canned chicken broth (reduced sodium)
-
1 ¼ pounds of bone-in chicken breasts - remove skin
-
1 cup diced, peeled chayote squash
-
¾ cup of canned pinto beans (low sodium)
-
1 tbsp. chili powder
-
¼ tsp garlic powder
-
Corn tortillas
-
1 Avocado
-
¾ can of corn
-
Cilantro
-
Oregano
-
Limes
Steps:
-
Rinse and drain beans
-
Cut corn tortillas into strips
-
bake in a pan with oil until crispy​
-

Slice and dice onions, squash, and avocados - keep separate
-
In saucepan, spray nonstick cooking spray (or add 1 tbsp. of butter)
-
Add onion and cook on medium heat for 5 min. until brown, stir occasionally​
-
Add broth and cover pan- increase heat to high
-
When broth boils, add; chicken, squash, beans, corn (no juice) chili powder, and garlic powder​
-

Bring to a boil again, then low heat for 20 min. to simmer
-

Remove chicken from soup, let cook, then shred, and add back into soup
-
Let cool for 10 min. then serve with toppings of; tortilla strips, avocado, cilantro, oregano, lime, and other toppings of your liking.

Then, enjoy!

Wonton Soup
Violeta's Curiosity pt. 2
Ingredients:
-
Wonton 24 Oz.
-
Box of chicken broth
-
1 pack of Udon noodles
-
Tsp of Ginger
-
Tbs of Garlic
-
1 Zucchini
-
2 Carrots
-
5 Bok choy
-
Optional:
-
Can add nuts or green onions for additional flavor
-
Steps:
-
In a pan, boil noodles with water on medium heat for 10-15 min.

In another pan with oil, place tsp of ginger, & tbsp. of garlic- sauté on medium heat for a few minutes
-
Then throw all chopped veggies​ and sauté for few more min.
-
Add wontons and mix for 1 min., then pour broth and stir for 2-5 min
-
Can add flavor packet from noodles at same time as broth (if it came with one)​
-

Once noodles are done, serve noodles in plate first
-
Then add the broth and veggies on top, and enjoy!​
