Fast & Easy Meals

Here you will find 4 different dishes that take under 15 minutes to prep! Each one of these meals have been a staple in Brenna's childhood, especially on a lazy day.​

Ceviche

Serves About; 4-6 People

Ceviche

Ingredients:

  • 1 lb. of Shrimp (deveined)

  • 2-3 Tomatoes

  • ½ Purple (Red) Onion

  • ½ Cilantro

  • 1 Cucumber

  • 3 Raw Jalapeños

  • 1 Avocado

  • 12-20 Limes (depending on your preference; more lime or fishy taste)

  • 1-2 Bags of Tostadas or Tortilla chips

Steps:

  1. Rinse Shrimp 1-2 times

  2. Get a bowl or baking dish

  3. Squeeze all limes into bowl

  4. Cut Shrimp to bite size pieces (the smaller, the faster it cooks)

  5. Dice all veggies, separately 

  6. Place raw shrimp into the bowl filled with lime

    1. Place ​diced onion and jalapeños at the same time with the shrimp

  7. Let marinate for 30-45 min. until shrimp is more pink toned

  8. Mix the rest of the veggies once ready, and enjoy with some tostadas or tortilla chips!

Serves About; 2-4 People

Taquitos

Oz's Special

Ingredients:

  • 1 lb. ground beef

  • Queso Fresco (Mexican cheese)  ​​

  • Steak & Meat seasoning

  • Lemon Pepper

  • Tortillas

  • Cilantro

  • 1-2 Tomatoes

  • ¼ Onion

  • Lettuce

  • Vegetable oil 

Steps:

  • Dice tomatoes, onion, cilantro, & lettuce

  • Warm non-stick pan and throw ground beef 

    • Mix for few min. until beef is somewhat separated​

    • Lightly drizzle seasonings over beef, mix, and season once more

    • Stir every other min., and cook for about 5-7 min. in medium meat

  • Warm desired amount of tortillas wrapped in damp napkin in microwave for 15-30 sec. until soft

    • Fill tortillas with 1.5-2 tbsp. of meat, some cheese, and tightly roll it up

      • Use toothpick to secure the wrap​

  • Grab a saucepan and pour about 2 inches of oil, in medium-heat until it sizzles

    • `Once sizzling, fry rolled taquitos in small batches to fully cover each in oil

    • Fry each for 1 min. on both sides, or until lightly golden

    • Place ready taquitos in a plate with napkins to soak up excess oil

  • Let cool, then garnish with;

    • Tomatoes, onions, lettuce, and more cheese

Battered Shrimp

Ingredients:

  • 1 lb. of Shrimp (deveined)

  • 2 eggs

  • 1 cup Flour

  • 1 cup Bread Crumbs

  • 3 tbsp. Olive Oil

Serves About; 4-6 People

Steps:

  • Begin by rinsing the shrimp 1-2 times

  • Then start slicing the shrimp in a butterfly cut

  • Pour the cup of flour on a plate

  • Pour the bread crumbs on another plate

  • Scramble 2 eggs in a bowl

  • Set the station;

    • Will be dipping the raw shrimp in; egg, flour, egg, then bread crumbs.

      • Do this for every shrimp, both sides.​

  • Once all shrimps have been prepared, heat pan on stove with about 3-4 tablespoons of oil for a minute- on medium heat. 

  • Then, place shrimps in pan and flip shrimp on both sides for one minute each.

  • Place ready shrimp on a plate of napkins to soak the remaining oil.

  • Wait a few minutes to cool, and then enjoy with a side of limes!

Serves About; 4-6 People

Tortas

Brenna's Ultra-Fast Delight

Ingredients:

  • 1 lb. of Ham (already sliced- Mexican Store)

  • 4-6 Bolillos (Mexican Store)

  • Stick of Butter

  • 2-3 Avocados

  • 3 Tomatoes

  • 1 Onion

  • Lettuce

  • Jalapeños (or Bell Peppers- depends on preference)

Optional;

  • Bacon

  • Chips (on the side)

  • Dressings: Mayo, Mustard, etc.

Steps Per Person:

  • Slice all vegetables to similar sizes for personal sandwiches

  • Toast Bolillos until liking

  • Spread butter on bread

    • If you have other condiments, spread on bread now​

  • Add some slices of ham (preferably 4-5)

  • Then add rest of the vegetables according to your own liking

    • Add bacon, or other ingredients you'd like to include​

  • Sit down, and enjoy with a cold glass of Mexican Soda!
